1 C flour
1 C cornmeal
1/3 C sugar
1/3 C honey
1 t salt
3 1/2 t baking powder
1 egg
1/2 C milk
1/2 C buttermilk
2 T vegetable oil
Directions:
- Preheat oven to 380.
- Put liners into 12 cupcake slots (or spray the slots with nonstick spray).
- In a large bowl, combine the flour, cornmeal, sugar, slat, and baking powder.
- Add the egg, milk, oil, and honey then stir until well mixed.
- Pour batter into cupcake slots.
- Bake for 15 minutes.
